There's nothing quite like curling up on a cold day with a bowl of home-made rice pudding. Even better if it's a vegan one. Enjoy.
Cooking time: 50 mins
Serves 3 regular portions or 2 piggy portions! ;-)
Calories: around 200cal per portion
1 handful of rice per person (you can use pudding or Arborio rice, but other types of rice still 'work')
500ml soya milk
50g demerara sugar
1tbsp rapeseed oil
spice to taste - cinnamon and nutmeg is popular, ground allspice and clove makes a change.
*Pimp your pudding by adding stewed apple (either stewed in a pan with raisins and spices, or in the microwave), or stewed plum and a square of chocolate for each serving.
As with all Cardia recipes, this one is balanced but vegetarian. If you wish, you can add meat or fish as desired, but do consider the extra salt, fat and calories that meat and fish contains.
