Comfort food - but without the guilt trip. A pasta bake's a pasta bake - this is higher in calories than most Cardia food, but it's fine to have every so often.
Serve with salad for extra virtue!
Preparation time: 15-20mins
Cooking time: 40 mins
Calories: around 500cal per portion
Sufficient dry or fresh pasta for each person (conchiglie takes up the sauce, but any shape is fine)
200g red split peas
150g spinach (fresh or frozen)
6-8 slices Bavarian smoked cheese
1 onion, chopped finely
1000ml vegetable stock
400ml passata or 1 tin chopped tomatoes
1tbsp pine nuts, toasted as desired
A smattering of smoked paprika and herbs of your choice to taste
As with all Cardia recipes, this one is balanced but vegetarian. If you wish, you can add meat or fish as desired, but do consider the extra salt, fat and calories that meat and fish contains.
