Sweet aubergines

Side dish recipes with aubergine at Cardia
This is a side dish that steals attention from the main dish. And it's great for changing the minds of those who say they don't like aubergine!
Preparation time: 2mins
Cooking time: 10 mins
Serves 2
Calories: around 75cal per portion

Ingredients
1 aubergine
1tbsp honey (set or clear, doesn't matter - this is great for using up that tricky little bit in the bottom of the jar)
1tbsp rapeseed oil

Method
  1. Melt the honey in a frying pan and add the oil.
  2. Slice the aubergine finely, or cut into 'chips'.
  3. Add the aubergine pieces to the frying pan, and turn ensuring each side of the aubergine pieces is coated with the honey and oil.
  4. When browned, turn into a serving dish or onto plates. Serve immediately.

*You can add spice to this - ground cloves make this interesting. But often it's nice just to have as is.

As with all Cardia recipes, this one is balanced but vegetarian. If you wish, you can add meat or fish as desired, but do consider the extra salt, fat and calories that meat and fish contains.
