200g Puy lentils
150g spinach (fresh or frozen)
80g cherry tomatoes, cut in half
1 pepper, deseeded and chopped

400ml vegetable stock
1tbsp pumpkin seeds
A smattering of ground allspice to taste
Rapeseed oil for brushing
