1tbsp rapeseed oil
1 small red onion, finely chopped
1 stick celery, copped
325g carrots, chopped
1/2 tsp ras el hanout spice to taste
420ml vegetable stock
1tbsp soya yogurt
1 medium red chilli, finely sliced for garnish (optional)
cracked black pepper to taste
1tbsp sunflower seeds, dry toasted
As with all Cardia recipes, this one is balanced but vegetarian. If you wish, you can add meat or fish as desired, but do consider the extra salt, fat and calories that meat and fish contains.
